  • 23 medium zucchini (sliced and quartered)
  • 23 medium yellow squash (sliced and quartered)
  • 12 oz white button mushrooms (quartered)
  • 1/3 cup olive oil (plus additional for drizzling)
  • 1/4 cup soy sauce
  • 3 tbsp minced garlic
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine chicken, zucchini, yellow squash, mushrooms, garlic, soy sauce, sesame oil, salt, and pepper. Mix until well combined.
  2. Transfer the mixture to the air fryer basket in an even layer. Drizzle with remaining olive oil.
  3. Set the air fryer to 375°F and cook for about 15 minutes or until chicken is cooked through and veggies are slightly crispy.
