  • 2 cups finely diced apples (preferably Fuji or Honeycrisp)
  • 2 cups flour (spelt, white, or oat)
  • 3/4 cup sugar
  • 1 cup milk (of your choice)
  • 3 1/2 tbsp oil (or applesauce)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine milk, oil (or applesauce), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples until evenly distributed.
  6. Pour the batter into a greased 9×5 inch loaf pan and bake for approximately 50 minutes or until a toothpick comes out mostly clean.
  7. Let it cool in the pan for about 10 minutes before transferring it to a wire rack.
