  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 6 oz cream cheese (cold)
  • 2 tbsp apple cider reduction

Instructions

  1. Prepare the apple cider reduction by simmering 2 cups of apple cider in a saucepan until it thickens to about 1/3 cup; cool it afterward.
  2. In a mixing bowl, beat cold cream cheese with white sugar and vanilla until smooth. Stir in cooled apple cider reduction and set aside.
  3. In another bowl, whisk together flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream together softened butter and brown sugar until fluffy. Add egg yolks and vanilla; mix well. Gradually incorporate dry ingredients until just combined.
  5. Preheat the oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets and create indentations for the cheesecake filling.
  6. Fill each indentation with the cheesecake mixture and bake for approximately 11 minutes or until edges are lightly golden.
  7. Allow cookies to cool slightly before brushing tops with melted salted butter.
