  • 2 tbsp coconut sugar (or brown sugar)
  • 1 tbsp flax seeds (ground or chia seeds)
  • 1 tsp baking powder
  • 1 1/2 cups plant-based milk (e.g., canned lite coconut milk)
  • 1 small banana
  • 1/2 tbsp lemon juice (or lime juice)
  • 1/2 tsp vanilla extract
  • Oil (for frying)
  • 3 apples (peeled, cored, and chopped)
  • 3 tbsp coconut sugar (or brown sugar)
  • 2 tbsp plant-based milk
  • 1/2 tbsp lemon juice (or lime juice)
  • 1/2 tsp cornstarch
  • 1 tsp cinnamon

Instructions

  1. In a mixing bowl, whisk together the oats flour, rice flour, cornstarch, and baking powder.
  2. In a blender, combine the plant-based milk, banana, flax seeds, coconut sugar, lemon juice, and vanilla extract; blend until smooth.
  3. Add the wet mixture to the dry ingredients and stir until combined. Let the batter rest for 10 minutes.
  4. Heat oil in a non-stick skillet over medium heat. Pour in about 1/4 cup of batter and cook until edges lift easily; flip and cook for another minute.
  5. For the filling, cook apples with coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon in another skillet until softened.
  6. Place apple filling on each crepe and roll up. Serve warm with caramel sauce or your choice of toppings.
