  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling by mixing diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, salt, and cornstarch in a bowl; set aside.
  2. For the dough, combine warm water and bread flour until smooth. Then mix in remaining ingredients: flour, sugar, yeast, salt, milk, cream, egg, vanilla extract, Tangzhong (if used), and softened butter. Knead until elastic.
  3. Allow the dough to rise in a greased bowl until doubled (about 90 minutes).
  4. Roll out the dough into a rectangle and spread the filling evenly over it.
  5. Roll tightly from one long side to create a log shape; cut into equal pieces.
  6. Place on parchment-lined baking sheet and let rise again for about 30 minutes.
  7. Preheat oven to 350°F (175°C) and bake for 25–30 minutes until golden brown.
  8. Prepare frosting by beating together cream cheese and powdered sugar with heavy cream; drizzle over warm rolls.
