  • 150 g unsalted butter (for crust)
  • 3 tart apples
  • 690 g cream cheese
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar (for apple filling)
  • 1 teaspoon ground cinnamon (for apple filling)
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon (for cheesecake filling)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F (180°C). Crush Biscoff cookies and mix with melted butter; press into a springform pan.
  2. Toss sliced apples with brown sugar and cinnamon; set aside.
  3. Beat cream cheese until smooth, add remaining filling ingredients, mixing until creamy.
  4. Layer half of the cheesecake mixture over the crust, followed by the apples, then pour the remaining cheesecake mixture on top.
  5. Prepare streusel topping with flour, brown sugar, oats, and melted butter; sprinkle over the cheesecake.
  6. Bake for about 85 minutes until set in the center. Cool completely before refrigerating for at least four hours.
