  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (divided)
  • 1 tsp salt
  • 600 ml milk (whole or lactose-free)
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat oven to 180°C (350°F). Peel and thinly slice apples, then mix with 150 g sugar and salt; let sit for 15 minutes.
  2. Transfer apples to a baking dish and bake for about 40 minutes until soft and caramelized.
  3. In a saucepan, whisk egg yolks, 50 g sugar, and salt. Gradually add milk while whisking. Cook over medium heat until thickened; remove from heat and stir in cornstarch mixed with water and vanilla bean paste.
  4. Layer caramelized apples in a serving dish, pour half of the custard over them, repeat with remaining apples and custard.
  5. Chill for at least one hour before serving.
