  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F. Line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together the unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the butter mixture while alternating with the apple cider until just combined.
  6. Gently fold in the grated apple until evenly distributed.
  7. Pour the batter into the prepared loaf pan and bake for about 55 to 60 minutes or until a toothpick inserted comes out clean.
  8. Allow it to cool in the pan for about fifteen minutes before transferring it to a wire rack to cool completely.
