  • 2 jars (12-14 oz each) marinated artichoke hearts
  • 34 ounces arugula
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (thinly sliced)
  • ½ cup black olives
  • ¼ cup shaved parmesan cheese
  • ¼ cup extra virgin olive oil
  • 2 tablespoons vinegar (any; we use white apple vinegar)
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup (or honey)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Arrange arugula on a large serving platter or salad bowl.
  2. Drain and scatter the artichoke hearts over the arugula.
  3. Top with halved cherry tomatoes, sliced red onion, and black olives.
  4. In a jar, combine olive oil, vinegar, lemon juice, maple syrup, oregano, basil, garlic powder, salt, and pepper. Shake well to mix.
  5. Drizzle half the dressing over the salad and serve the rest on the side along with shaved parmesan on top.
