  • 1/21 cup finely chopped celery
  • 1/21 cup finely chopped green onions
  • 2 garlic cloves, chopped
  • 8 cups low-sodium chicken broth
  • 1 cup rice
  • 68 oz shredded cooked chicken breast
  • 1/2 cup fresh lemon juice
  • 2 large eggs
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add carrots, celery, green onions, and garlic; sauté for about 5 minutes until tender.
  2. Pour in chicken broth and add bay leaves. Stir in the rice, season with salt and pepper, then bring to a boil. Reduce heat and simmer until rice is cooked (15-20 minutes).
  3. Stir in shredded chicken and heat through (about 5 minutes).
  4. In a bowl, whisk eggs and lemon juice together. Slowly temper by adding hot broth while whisking continuously.
  5. Gently add the egg-lemon mixture back into the pot while stirring. Remove from heat immediately to avoid curdling.
  6. Serve hot, garnished with parsley.
