  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 large apples (peeled and diced)
  • 2 large eggs
  • ½ cup milk
  • ¼ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp milk (for glaze)
  • ½ tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
  3. In another bowl, whisk together eggs, milk, melted butter, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined; some lumps are okay.

  6. Drop spoonfuls of batter onto the prepared baking sheet and bake for 15–18 minutes or until golden brown.
  7. While baking, prepare the glaze by whisking powdered sugar, milk, and vanilla extract until smooth.
