  • 3/4 cup unsalted butter, chopped
  • 1 packed cup light brown muscovado sugar
  • 2 + 2/3 cups mixed dried fruit
  • 1 cup glacé cherries, roughly chopped
  • 1 cup dried cranberries
  • Zest and juice of 1 orange
  • Zest of 1 lemon
  • 1/2 cup cherry apple juice
  • 3 large eggs, lightly whisked
  • 1 + 2/3 cups plain/all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp ground mixed spice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground allspice

Instructions

  1. Preheat your oven to 325°F (160°C). Grease an 8-inch round baking pan or line it with parchment paper.
  2. In a large bowl, cream together the chopped butter and light brown muscovado sugar until smooth. Add the lightly whisked eggs, cherry apple juice, orange zest, lemon zest, and juice; mix well.
  3. In another bowl, sift together the flour, baking powder, mixed spice, cinnamon, and allspice. Stir in the coarsely ground almonds.
  4. Gradually incorporate the dry mixture into the wet ingredients while stirring gently. Fold in the mixed dried fruit, glacé cherries, and dried cranberries until evenly distributed.
  5. Pour the batter into the prepared pan and bake for about 105 minutes or until a skewer inserted into the center comes out clean.
  6. Cool in the pan for about 15 minutes before transferring to a wire rack. After cooling completely, feed with cherry apple juice weekly until ready to serve.
