  • 1 lb pasta (ziti or penne)
  • 2 tbsp olive oil
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 14 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta in salted boiling water until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat; sauté onion and garlic until soft. Add ground meat and brown. Stir in crushed tomatoes, tomato paste, cinnamon, nutmeg, oregano, salt, and pepper; simmer for 15–20 minutes.
  4. For the béchamel sauce: Melt butter in a saucepan, whisk in flour for 1–2 minutes. Gradually add milk while whisking until thickened; stir in nutmeg, salt, pepper, and Parmesan cheese. Whisk in beaten egg before serving.
  5. Assemble by layering half the pasta in a greased baking dish, followed by meat sauce and remaining pasta; pour béchamel over top.
  6. Bake for 35–40 minutes until golden brown; let rest before slicing.
