  • 1/2 cup light or dark brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon espresso powder
  • 1/2 teaspoon fine sea salt
  • 45 Biscoff cookies (for the top)
  • Extra cookie butter (for the top)

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a bowl, mix brown sugar, granulated sugar, eggs, and vanilla until smooth.
  3. Melt unsalted butter and semi-sweet chocolate chips in a microwave-safe bowl; stir in cocoa powder.
  4. Combine melted mixture with the egg mixture until just mixed.
  5. Fold in flour, espresso powder, and salt until incorporated.
  6. Pour half of the batter into the pan; layer with chilled cookie butter; pour remaining batter over it.
  7. Top with crushed Biscoff cookies and drizzle extra cookie butter on top.
  8. Bake for 30-40 minutes; let cool before cutting into squares.
