  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cream cheese filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Chill in the fridge.
  2. In a stand mixer, cream softened butter with sugars until fluffy. Add egg yolks and vanilla, mixing well.
  3. In a separate bowl, whisk together flour, black cocoa powder, baking powder, and salt. Gradually add dry ingredients to wet mixture until combined.
  4. Preheat oven to 350°F (175°C). Scoop cookie dough, flatten it, place cream cheese filling in the center, fold over and roll into balls.
  5. Roll each ball in black cocoa sugar and place on parchment-lined baking sheets.
  6. Bake for 10-12 minutes until edges are set but centers remain soft. Let cool before serving.
