  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 3/4 cup unsalted butter, cold and cut in pieces
  • 1/4 cup shortening
  • 1/4 cup ice water
  • 12 ounces fresh blackberries
  • 1/2 cup sugar
  • 2 tsp Instant Clearjel thickener (or substitute 1 Tbsp cornstarch)
  • juice of 1/2 lemon
  • 1 cup confectioner’s sugar, sifted
  • water for thinning

Instructions

  1. Make the crust by pulsing together flour and salt in a food processor. Add cold butter and shortening; pulse until grainy. Gradually add ice water until dough holds together.
  2. Roll out one piece of dough and fit it into a baking sheet. Pour the cooled blackberry filling over it.
  3. Roll out the second piece of dough and place it over the filling. Seal edges by pressing down gently.
  4. Bake at 350°F (175°C) for about 40 minutes or until golden brown. Allow to cool and brush with glaze made from confectioner’s sugar mixed with water.
