  • 150g unsalted butter (softened)
  • 150g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 85ml buttermilk
  • 165g self-raising flour
  • 1.5 tbsp cocoa powder
  • 200g strawberry or raspberry jam
  • 200g unsalted butter (for icing)
  • 400g icing sugar
  • milk (for icing)
  • pink food coloring (for icing)

Instructions

  1. Preheat the oven to 160C Fan/180C/350F and line a cupcake tin with black cases.
  2. In a mixing bowl, beat the softened butter and caster sugar until fluffy.
  3. Add eggs and vanilla; mix until combined.
  4. Gradually add buttermilk, self-raising flour, cocoa powder, bicarbonate of soda, and red food coloring; mix until smooth.
  5. Fill cupcake cases evenly with batter and bake for 20-25 minutes until a skewer comes out clean.
  6. Cool completely before coring each cupcake to fill with jam.
  7. Prepare buttercream by mixing softened butter, icing sugar, milk, and pink food coloring until smooth.
  8. Pipe the buttercream onto the cooled cupcakes to create a brain effect.
