  • ½ kg boneless chicken, cut into 1-inch pieces
  • 600 grams fresh tomatoes or canned tomato puree
  • ¾ cup Greek yogurt
  • 2 to 3 tablespoons butter
  • Kashmiri red chili powder
  • garam masala
  • cumin powder
  • coriander powder
  • 28 cashews, soaked in hot water
  • ⅓ cup heavy cream

Instructions

  1. Marinate the chicken with lemon juice, chili powder, and salt; let it rest for 20 minutes. Add yogurt, kasuri methi, oil, turmeric, ginger garlic paste, coriander powder, cumin powder, and garam masala. Mix well.
  2. Refrigerate the marinated chicken for at least 30 minutes (overnight is best).
  3. If using onions, sauté them until golden brown in oil.
  4. Blend fresh tomatoes (and sautéed onions if used) with soaked cashews until smooth.
  5. In a pan, cook the marinated chicken until done; add the tomato-cashew puree and simmer. Stir in cream gradually.
  6. Serve hot with naan or rice.
