  • 4 1/2 pounds chuck roast (cut into 2- to 3-inch chunks)
  • 2 tablespoons crushed red peppers
  • 1 large onion (sliced)
  • 1 bunch parsley (coarsely chopped)
  • 6 to 8 garlic cloves (smashed)
  • 2 bay leaves
  • 1/2 teaspoon allspice berries
  • 4 whole cloves
  • 3 tablespoons unsalted butter or an alternative fat
  • 2 cups red apple vinegar
  • 2 tablespoons tomato paste
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Marinate the beef: In a large bowl, coat the beef with crushed red pepper. Cover and refrigerate overnight.
  2. Prepare the Dutch oven: Layer onion slices, parsley, garlic, and bay leaves at the bottom of a Dutch oven. Place allspice berries and cloves in cheesecloth; add to pot. Season beef with salt if desired and place on top of vegetables. Dot with butter.
  3. Combine liquids: Mix apple vinegar, tomato paste, and ground cinnamon in a bowl; pour over the beef.
  4. Cook: Bring to a boil over medium heat, then reduce to low heat for a gentle simmer. Cover tightly and cook for 3 to 3½ hours until meat is tender.
  5. Final touches: Remove bay leaves and cheesecloth pouch before serving hot.
