  • 3 ears of corn
  • 200g red grape tomatoes
  • 200g yellow grape tomatoes
  • 1 avocado
  • ¼ bunch cilantro (coriander)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup

Instructions

  1. Gather and rinse all ingredients. Slice red onions into thick rings.
  2. Preheat grill or stovetop grill pan over medium-high heat. Brush corn and onion rings with olive oil.
  3. Grill corn and onions for 5–7 minutes on each side until charred.
  4. Cool slightly; cut kernels off the corn cobs.
  5. In a large mixing bowl, combine grilled corn kernels, sliced onions, halved cherry tomatoes, diced avocado, and chopped cilantro.
  6. Whisk together the dressing ingredients in a small bowl; pour over the salad mixture and toss gently.
  7. Serve immediately or chill for about 30 minutes to enhance flavors.
