  • ½ cup milk (dairy or non-dairy)
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 small bell pepper, diced
  • ½ cup onion, finely chopped
  • 1 cup fresh spinach or kale (optional)
  • Olive oil or butter
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9-inch oven-safe skillet.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper for 3–4 minutes until softened. If using spinach, add it now and cook until wilted.
  3. In a mixing bowl, whisk together eggs, milk, salt, pepper, and garlic powder until combined.
  4. Stir in sautéed vegetables and both cheeses until well mixed.
  5. Pour the mixture into the prepared skillet and bake for 25–30 minutes or until set in the center and golden on top.
