  • 1/2 cup finely diced onion
  • 2 cups cheddar cheese
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream or softened cream cheese
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt
  • 1/21 teaspoon black pepper depending on taste

Instructions

  1. In a large mixing bowl, combine frozen diced potatoes, finely diced onion, 1 cup cheddar cheese, cream of chicken soup, sour cream (or cream cheese), garlic powder, salt, and pepper. Stir until well mixed.
  2. Spray the insert of a 6-quart slow cooker with cooking spray and spread the potato mixture evenly inside.
  3. Cover and cook on high for 3 hours or low for 6 hours until potatoes are tender.
  4. Once cooked, sprinkle remaining cheese over the top and cover again. Cook on high for an additional 30 minutes until melted and bubbly.
