  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • sour cream
  • green onions
  • diced tomatoes
  • sliced black olives
  • chopped cilantro

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and dry the potatoes. Pierce them multiple times with a fork and rub with olive oil, salt, and pepper. Bake on a baking sheet for about 45 minutes until tender.
  3. In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add taco seasoning and water; simmer for about 5 minutes.
  4. Once potatoes are baked, cut a slit on top of each potato and gently squeeze to create space for filling. Stuff with seasoned beef and top with cheddar cheese.
  5. Return to oven for an additional 5 minutes until cheese is melted.
  6. Top with sour cream, green onions, diced tomatoes, olives, and cilantro before serving.
