  • 230 g unsalted butter (cold & cubed)
  • 140 g ice cold water
  • 4 tart apples (about 700 g after peeling and slicing)
  • 300 g red cherries (pitted & halved)
  • 50 g brown sugar
  • 20 g cornstarch
  • 1 tablespoon ground cinnamon
  • 1 egg (beaten) for topping

Instructions

  1. Prepare the crust by mixing flour and salt, then incorporating cold butter until crumbly. Add ice water gradually until dough forms. Chill for at least 30 minutes.
  2. For the filling, mix peeled and sliced apples with pitted cherries, brown sugar, cornstarch, cinnamon, and vanilla in a bowl.
  3. Preheat oven to 375°F (190°C). Roll out dough into your pie dish, fill with fruit mixture, cover with second rolled-out dough, brush with egg wash, and sprinkle sugar on top.
  4. Bake for about 70 minutes or until golden brown. Cool before slicing.
