  • 2 tbsp olive oil
  • Juice of 2 limes (for marinade and salsa)
  • 1.5 cups fresh pineapple, diced
  • 0.5 red bell pepper, finely diced
  • 1 small jalapeño, seeded and minced (optional)
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced or diced

Instructions

  1. Marinate the Chicken: Combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and juice from one lime in a mixing bowl. Add chicken and coat thoroughly; let sit for at least 15 minutes.
  2. Make the Salsa: In another bowl, mix diced pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice from the second lime, and salt; set aside.
  3. Cook the Chicken: Heat a grill pan over medium-high heat. Cook marinated chicken for about 6–7 minutes on each side until fully cooked (internal temperature should reach 165°F).
  4. Assemble: Serve cooked rice as a base in bowls or plates; add black beans on top followed by sliced chicken and pineapple salsa. Garnish with avocado.
