  • 2 lbs ground chicken
  • 1 egg
  • 6 slices Virginia chicken ham
  • 6 slices Swiss cheese
  • 1/4 cup mayonnaise
  • 3/4 cup panko breadcrumbs
  • 1 cup milk
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon Dijon mustard
  • 2 teaspoons minced onion
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon dried parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon freshly grated nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, egg, mayonnaise, breadcrumbs, minced onion, garlic powder, dried parsley, salt, and pepper.
  3. In a loaf pan, spread half the chicken mixture. Layer with chicken ham and Swiss cheese before topping with the remaining chicken mixture.
  4. Bake for 25 minutes; add panko breadcrumbs on top and bake for an additional 15 minutes until golden brown.
  5. For the gravy: melt butter in a saucepan, whisk in flour until smooth. Gradually add milk while whisking until thickened. Stir in Worcestershire sauce and Dijon mustard.
  6. Allow the meatloaf to rest for 10 minutes before slicing and serving with gravy.
