  • 2 cups dry chickpeas
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 1 green bell pepper, chopped
  • 15 oz can of chopped tomatoes with juice
  • 6 cups low-sodium vegetable broth
  • Ground coriander (1 teaspoon)
  • Ground cumin (1 teaspoon)
  • Aleppo pepper (1 teaspoon)
  • Ground turmeric (1/2 teaspoon)
  • Ground allspice (1/2 teaspoon)
  • Extra virgin olive oil
  • Fresh cilantro, chopped (1 oz)
  • Lemon juice (1)

Instructions

  1. Soak the chickpeas overnight in water; drain before use.
  2. In an Instant Pot or large pot, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and other vegetables.
  3. Stir in spices until fragrant.
  4. Add soaked chickpeas, tomatoes, and vegetable broth; mix well.
  5. If using an Instant Pot, seal the lid and cook on high pressure for 15-25 minutes based on desired texture. For stovetop cooking, simmer until chickpeas are tender.
  6. Release pressure naturally for about 10 minutes before quick releasing any remaining pressure.
  7. Stir in lemon juice and cilantro before serving.
