  • 35g sourdough starter
  • 35g all-purpose flour
  • 20g cocoa powder
  • 20g coconut oil
  • 40g granulated sugar
  • 420g water
  • 10g salt
  • 500g bread flour
  • 175g semi-sweet chocolate chips

Instructions

  1. Prepare the levain by mixing sourdough starter, water, and all-purpose flour in a bowl. Let it rise for 3-4 hours until bubbly.
  2. In a saucepan, combine coconut oil and cocoa powder over low heat until mixed. Cool completely.
  3. In another bowl, mix the levain with granulated sugar, cooled cocoa mixture, water, salt, and bread flour. Rest for 30 minutes.
  4. Perform four sets of stretch and folds every 30 minutes, adding chocolate chips during the second fold.
  5. Allow the dough to rise for 1.5-2 hours until bubbly before transferring to an oiled baking pan.
  6. Cover and refrigerate overnight for cold fermentation.
  7. Bring to room temperature and let rise for another 3-5 hours before preheating your oven to 425°F.
  8. Top with melted butter and chopped chocolate; bake for 25-30 minutes or until golden brown.
