  • 1.5 lbs small potatoes (gold or red-skinned)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp grainy mustard
  • 1 tbsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, diced
  • 56 cornichons, diced
  • 1 tbsp cornichon juice

Instructions

  1. Boil the Potatoes: Slice potatoes in half/quarters and boil in salted water for about 15 minutes until tender. Drain and rinse under cold water.
  2. Prepare the Vinaigrette: In a large bowl, whisk together olive oil, vinegar, salt, pepper, Dijon mustard, grainy mustard, dill, shallots, cornichons, and cornichon juice.
  3. Combine: Add warm potatoes to the vinaigrette and gently toss to coat evenly.
  4. Serve: Enjoy immediately or chill before serving. Garnish with additional dill if desired.
