  • 1 yellow onion (diced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 1 tablespoon tomato paste
  • 3 cloves garlic (minced)
  • 2 cups dry green lentils (sorted and rinsed)
  • 1 can crushed tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 2 bay leaves
  • Black pepper (to taste)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté diced onion for 2–3 minutes until softened. Add sliced carrots and celery; cook for another minute.
  2. Stir in the tomato paste and sauté for an additional 2–3 minutes.
  3. Add minced garlic, Italian seasoning, paprika, cumin, bay leaves, and black pepper; toast spices for about a minute.
  4. Incorporate rinsed lentils, crushed tomatoes, vegetable broth, and water. Bring to a boil then reduce heat to simmer for 20–30 minutes until lentils are tender.
  5. Remove bay leaves and stir in fresh lemon juice before serving hot with parsley garnish.
