  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic
  • 4 cups beef broth
  • 2 (15 ounce) cans diced tomatoes
  • 1 (15 ounce) can red kidney beans (drained and rinsed)
  • 1 (15 ounce) can cannellini beans (drained and rinsed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups ditalini pasta
  • Fresh basil for garnish

Instructions

  1. Heat a large pot over medium-high heat. Add the ground turkey, breaking it apart while cooking until browned (about 5 minutes). Drain excess grease.
  2. Stir in diced onion, carrots, and celery. Cook until softened (7 to 10 minutes), adding minced garlic in the last minute.
  3. Pour in beef broth and add diced tomatoes. Rinse both types of beans before adding them along with salt, pepper, and thyme. Bring to a boil.
  4. Add ditalini pasta once boiling, then reduce heat to medium-low and simmer until al dente (approximately 7 minutes).
  5. Serve hot, garnished with fresh basil.
