  • 2 lbs beef chuck
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 2 tbsp vegetable oil
  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides (about 4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent. Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in curry powder, turmeric, cinnamon, and optional cayenne pepper for about 2 minutes to coat vegetables.
  4. Return seared beef to the pot and pour in coconut milk and beef broth. Bring to a simmer, then reduce heat to low.
  5. Cover and braise on low heat for about 2-3 hours until the beef is tender.
