  • Vegan gelatin sheets
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey cocoa spread

Instructions

  1. For the coconut mousse, whip heavy cream and mascarpone in a cold bowl, adding powdered sugar until soft peaks form. Soak vegan gelatin sheets in cold water.
  2. Heat coconut milk and dissolve soaked gelatin in it. Cool slightly before folding into whipped mixture.
  3. Pour mousse into hemisphere molds with a layer of cocoa spread in between. Freeze for at least 6 hours.
  4. For the shortbreads, mix ingredients to form dough, chill for 30 minutes, roll out and cut circles; bake at 180°C for 10 minutes.
  5. Assemble by placing domes on shortbread bases and topping with grated coconut.
