  • 1 1/4 cups all-purpose flour
  • 3/4 cup cake flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 8 tablespoons unsalted butter (cold and cubed)
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon cinnamon
  • For the streusel: 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 5 tablespoons unsalted butter

Instructions

  1. Prepare the streusel by mixing flour, brown sugar, cinnamon, and salt in a bowl. Add softened butter until crumbly. Refrigerate.
  2. Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  3. In a large bowl, combine flours, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold butter with sugars in a stand mixer until smooth. Add eggs and vanilla; mix well.
  5. Gradually add dry ingredients until just combined.
  6. Scoop dough into balls (about 22–24 cookies). Make an indent in each ball and fill with streusel.
  7. Bake for 8–11 minutes until edges are set and golden. Cool slightly before icing.
