  • 1 yellow onion, chopped
  • 2 medium carrots, diced
  • 3 celery ribs, diced
  • 3 garlic cloves, minced
  • 3 cans (8 oz each) tomato sauce
  • 2 cans (14.5 oz each) beef broth
  • 1 can (14.5 oz) petite diced tomatoes
  • 1/2 cup water
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 8 oz dry ditalini pasta

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned (5–7 minutes). Drain excess fat.
  2. Add chopped onion, carrots, celery, and minced garlic; sauté for about 4–5 minutes until soft.
  3. Stir in tomato sauce, beef broth, diced tomatoes, water, basil, oregano, sugar, salt, and pepper. Bring to a boil then reduce to simmer for 5–6 minutes.
  4. Add ditalini pasta; cook for 9–11 minutes until al dente. If needed, add more water during cooking.
  5. Fold in the kidney and cannellini beans; warm through for an additional 2–3 minutes.
  6. Serve hot topped with freshly grated Parmesan cheese.
