  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 2 medium carrots, diced
  • 1 large onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 15 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 4 cups chicken broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 15 oz can kidney beans, rinsed and drained
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup ditalini pasta
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned (3 to 5 minutes). Drain excess fat.
  2. Sauté carrots, onion, celery, and garlic in the same pot for about 3 to 4 minutes until softened.
  3. Stir in diced tomatoes and tomato sauce along with the browned beef.
  4. Add chicken broth and both types of beans; mix well and let simmer for about 10 minutes.
  5. Incorporate ditalini pasta along with Italian seasoning, salt, and pepper; simmer for an additional 10 minutes until pasta is tender.
  6. Stir in fresh basil before serving hot.
