  • 250 g all-purpose flour
  • 110 g whole milk
  • 1 egg
  • 50 g sugar
  • 1 pinch salt
  • 20 g butter (softened)
  • 3 g dry yeast (or 9 g fresh yeast)
  • 1 tablespoon orange jam
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl or stand mixer, combine flour and dry yeast. Add the egg, milk, vanilla extract, and orange jam; mix until combined.
  2. Let the dough rest covered for about 10 minutes. Then add sugar and salt; mix well and let it rest again for another 10 minutes.
  3. Incorporate softened butter into the dough until smooth and non-sticky. Chill in the refrigerator for one hour.
  4. Roll out the chilled dough into a rectangle (50 cm x 30 cm). Spread softened butter evenly on top.
  5. Fold the dough into layers by dividing it into four sections while keeping them attached at the center. Wrap in plastic wrap and chill for another hour.
  6. Roll out again to form a rectangle (20 cm x 35 cm) and cut into triangles.
  7. Roll each triangle from base to tip to form cornetti shapes and place on a parchment-lined baking sheet.
  8. Brush each cornetto with an egg wash mixed with cream or milk, sprinkle with sugar, cover to rise for about 30 minutes.
  9. Preheat oven to 180°C (350°F) and bake for about 20 minutes until golden brown.
