  • 15.5 oz black-eyed peas, drained and rinsed
  • 15 oz sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp chili powder
  • ½ tsp kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp fresh lime juice
  • ¼ tsp garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn thoroughly; pat dry.
  2. In a large mixing bowl, combine the beans and corn with chopped cilantro, red bell pepper, orange bell pepper, and red onion.
  3. In another bowl, whisk together chili powder, salt, sugar, olive oil, white apple vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving for optimal flavor.
