  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 teaspoon garlic, minced
  • 2 pounds ground beef
  • 2 large eggs, beaten
  • 1 cup canned pinto beans, drained and rinsed
  • ½ cup plain breadcrumbs
  • 1 cup BBQ sauce, divided
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with nonstick spray.
  2. In a skillet, heat vegetable oil and sauté diced onion, green bell pepper, and garlic until softened.
  3. In a large bowl, combine the sautéed vegetables with ground beef, beaten eggs, pinto beans, breadcrumbs, BBQ sauce, chili powder, salt, cayenne pepper, and black pepper. Mix gently until just combined.
  4. Shape half of the mixture into a loaf in the prepared pan; create a trench for the cheese filling.
  5. Sprinkle cheese into the trench and cover with remaining meat mixture. Shape into a loaf.
  6. Brush the top with BBQ sauce and bake for 40 minutes. Brush with more BBQ sauce and bake for an additional 25-30 minutes until the internal temperature reaches 160°F.
  7. Let rest for 5 minutes before slicing.
