  • 1 pound elbow macaroni
  • 3 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 4 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon ground nutmeg
  • Freshly ground black pepper, to taste
  • 1/2 cup panko breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Cook macaroni in salted boiling water until al dente; drain.
  3. In a pot, melt butter, sauté onion and garlic until softened.
  4. Stir in flour; gradually whisk in milk and cream until thickened.
  5. Season with nutmeg and pepper; fold in spinach and cheeses until melted.
  6. Combine pasta with cheese sauce; transfer to baking dish.
  7. Bake for 25-30 minutes until golden brown on top.
