Ingredients

  • Tagliatelle or fettuccine pasta
  • Boneless chicken breast
  • Sliced mushrooms
  • Minced garlic
  • Finely chopped shallot or onion
  • Heavy cream or crème fraîche
  • Grated Parmesan cheese
  • Olive oil
  • Salt & pepper
  • Fresh parsley

Instructions

  1. Cook the tagliatelle in salted boiling water until al dente, then drain and set aside.
  2. Season the chicken breast with garlic powder, dried Italian herbs, salt, and black pepper. Heat olive oil in a skillet over medium heat and pan-sear the chicken until golden brown on both sides. Let rest before slicing.
  3. In the same skillet, add more olive oil if needed and sauté shallots and garlic until soft. Add mushrooms and cook until tender.
  4. Pour in heavy cream and simmer gently while stirring. Gradually stir in Parmesan cheese until melted.
  5. Combine the cooked pasta with the sauce and toss to coat.
  6. Plate topped with sliced chicken and garnish with fresh parsley.
