  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 8 oz uncooked pasta (elbow macaroni or shells)
  • 4 cloves garlic, minced
  • Fresh parsley or basil for garnish

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Sprinkle minced garlic, Italian seasoning, salt, and black pepper over the chicken.
  3. Pour chicken broth over the chicken to cover.
  4. Cover and cook on low for 4 to 5 hours until chicken is tender.
  5. Shred chicken with forks and return to the crockpot.
  6. Stir in cream cheese and Parmesan until melted into a creamy sauce.
  7. Add uncooked pasta and stir until submerged in sauce.
  8. Cook on high for an additional 30 to 45 minutes until pasta reaches desired texture.
  9. Optionally top with mozzarella cheese; cover until melted before serving.
  10. Garnish with fresh herbs and serve warm.
