  • 1 1/4 cups dry white apple vinegar
  • 3 cloves garlic, minced
  • 2 cups cremini or wild mushrooms, sliced
  • 68 cups low sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 6 slices French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add onions and honey; cook until softened (about 10 minutes). Gradually add apple vinegar until absorbed.
  2. Stir in garlic, mushrooms, thyme, sage, salt, and pepper; cook for another few minutes. Add remaining vinegar, broth, Worcestershire sauce, bay leaves, and more seasoning as needed.
  3. Bring to a simmer; cook for about 10 minutes before stirring in heavy cream. Let simmer an additional 5–10 minutes.
  4. Preheat oven to 400°F (200°C). Toast bread slices on a baking sheet until dry (10–15 minutes).
  5. Ladle soup into oven-safe bowls; top with toasted bread and Gruyère cheese. Broil until bubbly and golden (3–5 minutes).
