Ingredients

  • 2 medium carrots (roughly 5 oz)
  • 1/2 medium onion (roughly 2.5 oz)
  • 14 oz young potatoes
  • 1 tablespoon butter
  • 32 oz vegetable or meat stock
  • 200 g heavy cream
  • 100 g fresh dill
  • Lemon juice, nutmeg, salt, and pepper to taste

Instructions

  1. Peel and dice the onion, carrots, and potatoes; grate the carrots.
  2. Sauté the onion in butter until translucent.
  3. Add potatoes and grated carrot; cook for another few minutes.
  4. Pour in stock, bring to a boil then simmer for about 20 minutes until potatoes soften.
  5. Blend part of the soup with heavy cream until smooth; return to pot.
  6. Stir in chopped dill, lemon juice, nutmeg, salt, and pepper; cook for another few minutes.
  7. Serve hot with extra dill and cheese flakes if desired.
