Ingredients

  • 1214 cloves garlic
  • 500 g potatoes
  • 60 g olive oil
  • 250350 ml vegetable broth
  • 60 ml soy or oat cream
  • 3 tbsp nutritional yeast
  • Sea salt
  • Black pepper

Instructions

  1. Preheat oven to 200°C (400°F). Place peeled garlic on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for 15-20 minutes until golden.
  2. Peel and cube potatoes. In a pot, add potatoes and cover with water. Boil for 10-15 minutes until tender.
  3. Drain the potatoes and combine them with roasted garlic, vegetable broth, soy/oat cream, nutritional yeast, and seasoning in a blender. Blend until smooth.
  4. Return the soup to the pot over low heat to warm through before serving.
