  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or full-fat coconut milk)
  • 5 oz fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Dried oregano
  • Dried basil
  • Salt
  • Black pepper
  • Red pepper flakes (optional)

Instructions

  1. 1. Boil salted water in a large pot. Cook gnocchi according to package directions until they float; drain and set aside.
  2. 2. In a skillet over medium heat, heat olive oil and sauté chopped onion until softened (about 5-7 minutes). Add minced garlic; cook for an additional minute.
  3. 3. Stir in tomato paste and cook for another 1-2 minutes. Add crushed tomatoes, oregano, basil, salt, pepper, and red pepper flakes; simmer on low for at least 15 minutes.
  4. 4. Remove from heat; stir in cream and Parmesan until smooth. Add fresh spinach and stir until wilted.
