  • 1 pound Italian sausage (ground)
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook the penne pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat and brown the ground Italian sausage. Transfer to a plate once cooked.
  3. In the same skillet, sauté minced garlic, then add sun-dried tomatoes, chicken broth, Italian seasoning, red pepper flakes, and heavy cream. Simmer until thickened.
  4. Stir in Parmesan cheese, cooked sausage, and spinach until wilted.
  5. Toss in the penne pasta with reserved pasta water as needed for consistency.
