  • 180 grams white chocolate
  • 3 tablespoons hot water
  • 1½ teaspoons vegan gelatin powder
  • 4 egg whites
  • 30 ml orange juice
  • 200 ml crème anglaise
  • Grated rind of 1 orange
  • Whipped cream

Instructions

  1. Melt white chocolate with hot water in a saucepan over low heat until smooth.
  2. Bloom vegan gelatin powder in a bowl with a tablespoon of water for about 5 minutes.
  3. Whip egg whites with an electric mixer until stiff peaks form.
  4. Combine melted chocolate with bloomed gelatin. Fold in half of the whipped egg whites gently.
  5. Add orange juice and fold in remaining egg whites carefully.
  6. Spoon into serving glasses and chill for at least two hours before serving.
  7. Garnish with whipped cream and grated orange rind before enjoying.
