  • 1 cup + 2 tbsp granulated white sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter, cut in cubes
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated white sugar
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated white sugar (for rolling the dough in)
  • 1/2 cup granulated white sugar (for the brulee topping)

Instructions

  1. Prepare the vanilla pastry cream: Heat milk and vanilla bean paste, whisk egg yolks with sugar, salt, and cornstarch. Combine and cook until thickened. Stir in butter and chill.
  2. Make the cookie dough: Cream softened butter and sugar, add egg and vanilla. Mix dry ingredients, then combine with wet ingredients.
  3. Assemble cookies: Portion dough onto baking sheets, indent centers, fill with pastry cream, top with more dough, and seal edges.
  4. Bake: Preheat oven to 350°F (175°C) and bake for about 9 minutes or until golden around edges.
  5. Caramelize topping: Cool cookies completely, sprinkle sugar on top, then caramelize using a kitchen torch or broiler.
