  • 2 medium zucchinis (about 2 cups shredded)
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup all-purpose flour (or whole wheat flour)
  • ¼ cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • Vegetable oil for frying

Instructions

  1. Grate the zucchinis into a colander and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
  2. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  3. In a large bowl, mix the drained zucchini with egg, flour, Parmesan cheese, green onions, garlic, and black pepper until combined.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Scoop about 2 tablespoons of batter into the skillet for each fritter and flatten slightly with a spatula.
  6. Fry for about 3–4 minutes on each side until golden brown.
  7. Drain on paper towels before serving warm.
